    Fried Apples    

2 lbs. apples, cored but not peeled (tart works better)
1/4 cup sugar
1 teaspoon cinnamon
3 tablespoons butter

Slice apples into wedges about 1/4-1/2 inch thick. Melt butter in a cast iron skillet then add apples. Cover and cook over medium heat until soft, about 5 - 10 minutes. Uncover, add sugar and cinnamon, then cook until lightly browned on underside.
