      Chocolate Cake      


3 squares semi-sweet chocolate (can use 3 oz. semi-sweet chips as a substitute)
1/2 cup water
2 1/2 cups sifted cake flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening
1 cup granulated sugar
1/2 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup buttermilk

Melt chocolate in the water in a saucepan over low heat, stirring until smooth, and set aside. Sift flour with soda and salt. Cream shortening and gradually add sugars, beating until light and fluffy. Add eggs one at a time, beating well after each. Blend in chocolate mixture and vanilla. Add flour alternately with buttermilk, beating well after each addition. Pour into two 9 inch layer pans lined with waxed paper. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes, then remove from pans and finish cooling on a rack. Frost with cream cheese frosting.
