        Beef Stew        


brown 1 lb. of beef stew meat/cubes and add to pot
brown 1 large onion cut in stips and add to pot
put in a 1 lb bag of baby carrots
add one or two potatos peeled and cubed if desired
add a l lb can of diced tomatos or a couple of fresh tomatos peeled and diced if desired
salt to taste (usually about 1 teaspoon)
3 or 4 tablespoons of sugar
add 2 or 3 whole bay leaves
add some oregano and basil to taste
put in about 1 cup of red wine

If using a crock pot, put on the lid and cook on high for about 4 hours, longer doesn't hurt.

If using a regular pot on the stove, put in 2 cups of water, bring to a boil then reduce to simmer for at least 2 hours. Keep and eye on it so it doesn't boil dry.

I usually only put in carrots and onions, but add the potatos and tomatos sometimes. You can always adjust the amount of each veggie and add in others you like as well. The big key for taste is the bay leaves and browning the onions first.

You can also cook it down very thick and serve over rice or noodles as an alternative.
