One fryer chicken cut up or your choice of chicken pieces. Leave skin on as fried chicken just doesn't taste right without the skin!
Combine 1 egg and 1/4 cup of milk for dipping the chicken.
Make your coating with corn meal, flour, salt, and paprika. I don't use exact measurements usually and adjust to taste, but try 3/4 cup corn meal, 3/4 cup flour, 1 tablespoon of paprika, and 1 teaspoon of salt. Place this in a large paper or plastic bag for shaking later.
put about 1/2 inch of oil in the bottom of a large frying pan and heat to medium high.
Dip the chicken pieces in the egg and milk mixture then drop in the bag of coating. Shake vigorously until pieces are well coated then pan fry until golden brown on both side and juices flow clear when you stick a knife in a thick spot.
