You can always make this from the Zatarain's box mix, but try it homemade sometime. If you don't want to use pork, you can substitute chicken breasts or sausage.
1 lb. pork tenderloin, cut into 1-2 inch cubes
1 large onion, chopped
1 clove garlic, minced
1 stalk celery, chopped
1 cup diced tomatoes (fresh or canned)
1 cup wine (red or white)
1 cup regular long grain rice
1 cup water
Louisiana Hot Sauce
Tony Chachere's Cajun Spice
Brown the pork in a large skillet then add the onions and brown them. Add the tomato, garlic and celery and cook for 5 minutes over medium heat. Add in the wine, a couple of dashes of hot sauce, and 2 teaspoons of Cajun spice (adjust to your taste, it can get hot!). Cook for 10 minutes then add rice and water. Stir well then cover and simmer for 20-30 minutes until rice is done. Add more water if it gets too dry.
