Southern Eats

  Corn Bread  

1/2 cup plain yellow cornmeal
1/2 cup plain flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg
2 tablespoons vegetable oil
1/2 cup milk

Pre-heat oven to 450 degrees.

Heat a small (7 inch) cast iron skillet in the oven.

Mix ingredients well. Take the skillet out of the oven and add a tablespoon of butter or margarine in the bottom. After this melts, pour the batter in and bake for 15 to 20 minutes until browned.
