  Fried Green Tomatoes  

Cut 2 large green tomatoes into 1/4 to 1/2 inch slices. Tomatoes must be totally green or they will get too mushy. This amount will serve 2 people, so increase as you need for the number of people you are serving.

Combine 1 egg and 1/4 cup of milk and soak the tomatoes for 5 minutes.

Make your coating with corn meal, salt, paprika, and a bit of flour. I don't use exact measurements usually and adjust to taste, but try 1 cup corn meal, 1/4 cup flour, 1 tablespoon of paprika, and 1 teaspoon of salt.

put about 1/4 inch of oil in the bottom of a large frying pan and heat to medium high

Take the tomato slices out of the egg and milk mixture and coat with the cornmeal mixture then place in the hot oil. Fry until golden brown on both sides then drain on a paper towel.

Serve when hot and lightly salt if needed to suit your taste.
