  Roasted Corn  


Trim loose pieces off unshucked ears of fresh corn, preferably sweet corn. Soak in water for 10 minutes then bake in a 350 degree oven for 45 minutes. Peel back shucks to form a handle to hold with, spread with butter, salt to taste, and enjoy!

If you can't get unshucked corn, take all the shucks and silks off and rinse well. Take a piece of aluminum foil large enough to seal a single ear, place the ear on it, spread with softened butter, salt to taste, and seal the foil. Bake in 350 degree oven for 45 minutes. Carefully open foil, it will be steamy, insert corn holders in each end (substitute forks if you don't have corn holders), and enjoy.
