Southern Eats

  Biscuits  


2 cups sifted all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
2 teaspoons sugar
1/2 cup shortening
2/3 cup milk

Pre-heat oven to 450 degrees

Sift dry ingredients in a bowl and cup in shortening until coarse and crumbly. Make a well in the mixture and pour in milk. Stir with a fork until dough forms a ball that follows the fork. Turn out on a floured surface and knead gently, 10-12 strokes. Roll out to 1/2 inch thick and cut with a round biscuit or cookie cutter. Put in a greased iron skillet with edges touching (you can use a cookie sheet if you don't have an iron skillet) and bake for 10-12 minutes until golden brown. This will make about a dozen biscuits so you will probably have to bake two skillets full unless you have a large skillet.

Serve with butter and jelly, sausage gravy, or place your favorite breakfast food inside (bacon, sausage patties, eggs, etc.)
