  Three Bean Salad  


This is a southern classic that many people love.

1 can of green beans
1 can of red kidney beans
1 can of yellow wax beans
1 onion chopped
1 green bell pepper chopped (can use red if you want more color)
1 small jar of pimentos, chopped
3/4 cup sugar
2/3 cup vinegar
1/3 cup vegetable oil
1 teaspoon salt
1/2 teaspoon black pepper

Pour juice off the beans and put them in a large tupperware type bowl along with the onions, pepper, and pimento. Mix the rest of the ingredients well then pour over everything in the bowl. Cover and put in the refrigerator overnight to marinate. Serve alone or on a bed of lettuce and spoon some of the juice over as dressing.
