  Stuffed Bell Peppers  


This tasty dish is meat and vegetable all in one.

4 large green bell peppers
1 lb. of ground beef
1 onion, chopped
1 clove garlic, minced
1 1/2 cups cooked white rice
2 cups tomato sauce
Salt to taste
1 teaspoon Tony Chachere's Creole Seasoning
Tabasco sauce (optional)
cheddar cheese

Slice the tops off the peppers and remove the seeds. Place peppers in a baking dish and make sure they stand upright and won't fall over. Brown the ground beef and onions then drain off the fat. Mix in the garlic, rice, and tomato sauce and spices. Adjust seasonings to your taste and add a bit of Tabasco if you want some bite. Mix well and spoon into peppers and pack down. Bake at 350 degrees for 25 minutes then top with grated cheddar cheese and bake for 15 minutes longer.
